Quick Oatmeal Pancakes
Pancakes are an all-time breakfast favorite! Oatmeal is a low-calorie and high-protein breakfast, they provide perfect balance of protein, carbs and fats.
Ingredients : For 12 pancakes
- 2 cups buttermilk
- ½ cup of milk
- 2 eggs
- 2 tablespoons vegetable oil
- 2 tablespoons sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- 2 cups quick-cooking oats
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Preparation:
- In a large bowl put the quick-cooking oats and the buttermilk and let it stand for 5 minutes. Stir in the eggs and set aside.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and vanilla extract. Stir in the wet ingredients just until moistened; add raisins.
- Heat a medium griddle or skillet with some oil in the bottom.
- Drop in about 1/4 cup of batter in and shake the pan around gently to thin it out. Cook on medium to medium-high heat until you see allot of bubbles on the top, about 5 minutes and then flip to cook until golden on the other side. Cook until second side is golden brown, about 5 minutes more.
- Serve with syrup or your favorite topping or better freshly sliced fruit of your choice.
