Pepper salad with garlic and parsley

Pepper is one of the most popular vegetables in the world and is also easy to grow. There is a wide range of varieties and colors ranging from green, yellow, orange, red, purple or brown. This pepper salad that can be prepared during the weekend, stored in a refrigerator and served during the week as an addition to other meals. This is a beautiful and simple, but also a healthy salad.
Whether you choose red or green peppers doesn´t matter it still tastes great.

Ingredients: (servings 4-6 persons)

  • 10-15 peppers (red or green) medium size
  • 8 cloves of garlic
  • ½ stalk of parsley
  • 1 teaspoon salt
  • 6-8 tablespoons vinegar
  • 10 tablespoons of olive oil

Preparation:

Peppers bake on a grill or in the oven. Wash the peppers and wipe with a cloth.Preheat the oven to 390°F (200°C) and insert the peppers. Bake until the central part is completely soft, and the peppers gain a dark brown color on the outside. If you grill the peppers then on the hot grill put the washed peppers and rotate holding on the stalks, until they are completely baked on each sid. Remove and place them in the enamel bowl and cover them or all put together in a plastic bag and leave until it cools down. Peel off the peppers and put together in a bowl for serving.
Chop the parsley and garlic, and mix them. In a separate container mix vinegar, salt, oil and stir well, and at the end pour a little water. Pour the mixture over the peppers and sprinkle all over with little more garlic and parsley. Cover and leave in the fridge to cool.
