Spring omelet breakfast
Ingredients for 2 person:
- 4 eggs
- finely chopped chives
- 2 chopped spring onions
- 1 cup of fresh chopped spinach leaves
- ½ cup sliced fresh mushrooms
- ½ cup diced fresh tomatoes
- 30grams or 1 oz of butter
- salt and pepper
- 2 tablespoons of olive oil
Preparation:
- Wash the leaves of spinach and cook just until wilted. Put the butter in a pan and cook the mushrooms for about 5 minutes.
- Beat the eggs in a bowl and season it with salt and pepper. Heat the olive oil in a pan and fry 2 egg pancakes on both sides.
- Put the eggs on a plate fill them with mushroom and spinach, add the tomatoes and chopped onions and flip the eggs.
