Spring omelet breakfast

Ingredients for 2 person:

  • 4 eggs
  • finely chopped chives
  • 2 chopped spring onions
  • 1 cup of fresh chopped spinach leaves
  • ½  cup sliced fresh mushrooms
  • ½  cup diced fresh tomatoes
  • 30grams or 1 oz of butter
  • salt and pepper
  • 2 tablespoons of olive oil

Preparation:

  1. Wash the leaves of spinach and cook just until wilted. Put the butter in a pan and cook the mushrooms for about 5 minutes.
  2. Beat the eggs in a bowl and season it with salt and pepper. Heat the olive oil in a pan and fry 2 egg pancakes on both sides.
  3. Put the eggs on a plate fill them with mushroom and spinach, add the tomatoes and chopped onions and flip the eggs.
