1. Spicy green beans salad

Ingredients for 4 persons:

  • 500 grams or 1.1 lb long green beans
  • 3 tablespoons olive oil
  • 2 tablespoons finely chopped garlic
  • 1 teaspoon crushed chili pepper
  • 1 flat teaspoon salt
  • 1 tablespoon squeezed lemon juice

Preparation: Wash the beans and remove the ends. Boil the green beans in a pot for 10-15 min, drain the water and put aside. Fry the garlic and the chili pepper for a few seconds, drop in the beans and stir for 15 seconds constantly. Take off the stove and add salt and lemon juice. Serve on a room temperature.

Ingredients for 4 persons:

  • 800 gr.  or 1.75 lb of long green beans
  • 100 ml or 3.4 us fl.oz, extra virgin olive oil
  • 2 pieces of red onion
  • 4 pieces of garlic
  • 8 pieces of cherry tomato water
  • pinch of salt and black pepper
  • 2 tablespoons chopped fresh parsley

Preparation: Wash the beans and remove the ends. In a large pot with a thick bottom, heat the olive oil. Add the chopped onion and fry over a low temperature for a few minutes. Add green beans and finely chopped garlic, and fry for about a minute while stirring. Add peeled and sliced cherry tomato, salt and pepper, to taste. Add about 100 ml of water. Cover the pot and stew it over low heat for about 1 hour and 20 minutes. Add fresh chopped parsley and turn up the temperature on medium heat, and remove the cover from the pot. Simmer in an open pot for about 10 minutes, until all the liquid has evaporated and until it thickens.
Serve in soup plates or bowls, decorated with fresh parsley, with the addition of crushed white cheese (feta, ricotta, etc.).

  • 500 grams or 1.1 lb of long green beans

  • 1 tablespoon of vinegar
